I don’t know about you but I love Friday’s. Every time my husband and I decide to go out to eat, we always end up there. I love most of their appetizers and this in particular I have tried to recreate at home due to its simplicity. If you like their Tostada Nachos as much as I do you will love this recipe and if you haven’t tried them before, welcome to the club. Here it is.
What you’ll need
1/2 lb ground beef, browned and drained
1 can 16oz. refried beans
1/4 teaspoon cumin
1/4 teaspoon pepper
1/2 teaspoon salt
2 tablespoons milk
1 cup Mexican blend shredded cheese
8 round corn tostadas
1 cup shredded lettuce, optional
1/4 cup sour cream, optional
1/4 cup diced tomatoes, optional
How it’s done
Break each round tostada in half, until you have 16 slices. Set aside.
On a medium pot over medium heat, combine refried beans, ground beef, salt, pepper and cummin.
Add the milk and stir until bean-beef mixture has been heated through. Remove from heat.
Spread each tostada with enough bean-beef mixture to cover all around and place on a baking sheet.
Sprinkle around a tablespoon of cheese on each tostada and place under the broiler at 400 degrees for 3 minutes or until cheese has melted.
Serve hot by themselves or with as many toppings as desired.
The Friday’s ones are served with a jalapeno slice on top of each tostada.
